For the Salad:
- Tomatoes
- Cucumber
- Feta
- Roasted Butternut
- Avo
For the roast Butternut:
- 1 butternut
- 2 garlic cloves
- 1 red chilli
- 10ml ground coriander
- Salt and pepper
- 50ml oil
Cut the butternut in half and then cut each half into four or five wedges.
Chop the garlic and chilli and mix with all the oil and coriander, and then rub the mix onto the butternut sprinkle with salt and pepper.
Place in an oven dish roast in oven at 200 degrees for about 20 min.
Mix all the salad stuff in a bowl and serve with a honey and mustard dressing.
