These delicious sweet potato brownies are easy to make and full of health benefits. They are gluten-free and can be made vegan friendly too. Once you have tried them you will wonder why there was ever a need for anything more!

Health Benefits of Sweet Potato Brownies

Looking at the ingredients list you can understand that there may be some serious bonuses to trying them out. For starters, using honey instead of refined sugar means that your body gets access to powerful phytonutrients. These are what give raw honey anti-oxidant and anti-viral properties. However it is important to remember that too much processing kills these wonderful nutrients, so try sticking to raw honey.

Then we have wonderful sweet potatoes. Not only a great source of fibre, but it is also rich in beta-carotene. An antioxidant that plays a role in promoting digestive health while also supporting a healthy immune system. Finally, we have cocoa which is boosted full of polyphenols and flavanols. So all in all you are looking at a recipe that could greatly benefit your body. Never mind the perks that come with the absence of processed flours and sugars.

Honestly, these sweet potato brownies are simply divine! Once you have experienced the taste of them, you won’t go back. Even if you can eat regular shop-bought brownies. Ingredients
  

For the Brownies

  • 2 Medium Sized Sweet Potatoes Raw
  • 1 cup Cocoa Powder
  • ½ cup Coconut Oil Melted
  • ½ cup Honey
  • 1 cup Almond Flour
  • 2 tsp Vanilla Extract
  • 4 tsp Baking Powder

For the Sauce

  • 2 tsp Crunchy Peanut Butter
  • 2 tsp Coconut Oil
  • 2 tsp Cocoa Powder
  • 2 tbsp Honey

Instructions
 

For the Brownies

  • Pre-heat oven to 180 degrees Celsius / 350 degrees F. Grease an oven dish or baking tray of your choice with nonstick spray, or coconut oil spray.
  • Peel and grate the sweet potatoes finely.
  • Melt the coconut oil and honey together.
  • Place in baking tray and pop into the oven.
  • Bake for 30 to 40 minutes, depending on your oven. Remember to watch this, if brownies are over baked, they tend to be dry.

For the Sauce

  • Add all the sauce ingredients to a bowl, melt on medium heat, do not let it bubble or overheat.
  • Spread on the brownies when slightly cooled.
  • Serve with custard if having them as a dessert.
