What is Chicken Liver Pâté? 

Chicken liver pâté is a spread that is made from cooked chicken livers mixed with onion, garlic, butter, cream, and spices. It is blended into a paste and set in a ramekin. You can also pour a layer of melted butter over the top of the paste for some extra creaminess. For this recipe, chicken livers are cooked with onions, sweet chilli sauce, peri peri hot sauce, and spiced simply with salt and pepper.  

Perfect as a Quick Snack 

The perfect snack to have when you are craving something yummy but are not quite hungry enough for a full meal. Store some French baguettes in your freezer to have ready to toast, spread the homemade chicken liver pâté over, and enjoy! It is that simple. You can store your pâté in your fridge for up to 1 week. 

Bring this spread out when you have friends over and serve as a starter with some artisan bread. It will surely set the tone for a sophisticated lunch or dinner to come!

Ingredients
  

  • 1 garlic loaf
  • 250 g chicken livers
  • 1 medium onion (chopped)
  • 25 ml hot peri peri sauce
  • 25 ml sweet chilli sauce
  • Salt and pepper to taste

Instructions
 

  • Crisp up the garlic bread in the oven on 180°C for 10 minutes.
  • Remove the bread from the oven and once cooled, cut into croutons.
  • Fry onions, livers, salt and pepper in a pan for 15 minutes.
  • Add chilli sauce.
  • Pour the mixture into a food processor or blender and blend until smooth and creamy.
  • Serve on top of croutons.
