Ingredients

- 8-10 chicken breasts
- 200 g bacon
- 3 tomatoes
- 2 cups grated cheese (mozzarella works perfectly) or sliced cheese of your choice.
- 410 g canned chopped tomatoes
- 2 slices feta cheese (crumbled)
- Cajun spice
- mixed herbs (origanum is perfect)
- black pepper
- toothpicks
Quick Method
Prepare the Chicken
- Halve each chicken breast fillet. Place between sheets of plastic wrap and pound gently with a meat mallet, rolling pin, or the edge of a small saucer until evenly thin.
Season and Fill
- Sprinkle the chicken with Cajun spice. Layer on bacon slices, cheese, and tomato. Season with salt and pepper.
Roll and Secure
- Roll each chicken fillet tightly with the filling inside, tucking in the ends. Secure with toothpicks.
Bake
- Place the rolls in a greased baking dish. Pour over the tinned tomatoes, sprinkle with extra grated cheese and feta if desired, and season with black pepper and mixed herbs.

Cook
- Bake uncovered at 180°C for about 40 minutes, or until the chicken is cooked through and tender.

Instructions
Preheat oven to 200°C.
- Halve each chicken breast fillet. Place each breast between sheets of plastic wrap and pound with a meat mallet, rolling pin or edge of small saucer until required thickness.
- Sprinkle chicken breasts with Cajun spice, add the bacon slices, cheese and tomatoes. Season with salt and pepper.
- Roll up each seasoned chicken breast with bacon, cheese and tomatoes inside. Tuck in ends and fasten with toothpicks.
- Place the stuffed chicken rolls into a prepared dish. Add the tin of tomatoes. You can sprinkle more grated cheese on top if you like it extra cheesy. Sprinkle with feta. Season with black pepper and mixed herbs to your taste.
- Place uncovered in the oven for 40 minutes, or until chicken is cooked and tender.
