Classic trifle reminds so many of us of huge family gatherings — drunken aunts, guffawing uncles, kids charging around, and generations of love, laughter and bonhomie. It was the dessert that appeared at every celebration, spooned generously into bowls while the grown-ups argued good-naturally about who made the best one. And for the kids, there was always the alcohol-free version — the beloved “Bazaar Pudding” — so nobody missed out on the fun.

This is the classic version, built from sponge or Madeira cake, jam, tinned fruit, silky custard and a generous splash of sherry — with a little extra poured in for the aunts. Layer it in a beautiful glass bowl so every stripe of colour shows through, then finish with billowy whipped cream, glace cherries and toasted almonds for that unmistakable crunch.

If you grew up sneaking spoonfuls of trifle straight from the fridge before dinner was even served, you already know why this one’s a classic. Some people like to add a layer of raspberry jelly for extra sweetness and colour — feel free to sneak that in too. Either way, this is the trifle worth passing down.

  • Sponge cake (doesn’t need to be freshly made) or Madeira cake, sliced into small cubes
  • Strawberry or raspberry jam
  • Custard — powdered or ready-made UHT
  • 500 ml milk (if using powdered custard)
  • Tinned fruit — fruit salad, peaches, mandarins — or fresh fruit
  • 1 sliced banana
  • 75 ml sherry
  • Glace cherries
  • Flaked almonds, toasted if you like
  • Sugar strands, for decoration
  • 300 ml double cream, whipped

Quick-Reference Method

  • Break sponge cake into pieces, spread one side with jam, and layer into a glass or ceramic bowl.
  • Splash with sherry and a little tinned fruit juice if the sponge looks dry.
  • Add a layer of fruit, then sliced banana. Repeat layers until the bowl is nearly full.
  • Pour custard over the top, making sure all the fruit is well covered.
  • Top with whipped cream and decorate with glace cherries, flaked almonds and sugar strands.
  • Chill for at least 2 hours before serving.

Ingredients

Instructions
 

Choose your bowl — Selecta lovely glass or ceramic bowl — the layers are half the appeal, so glass showsthem off best.

  • Layer the base — Break up pieces of sponge cake, spread one side with jam, and place jam-side up in the bowl. Splash generously with the 75 ml sherry, adding a little juice from the tinned fruit if the sponge looks too dry.

  • Add the fruit — Scatter over a layer of tinned or fresh fruit, then repeat the sponge, jam, sherry and fruit layers until the bowl is nearly full. Add the sliced banana in one of the final layers.
  • Pour over the custard — Prepare the custard (using 500 ml milk if working from powder) and pour it evenly over the trifle, making sure every bit of fruit is well covered.
  • Top and decorate — Spread or pipe the 300 ml whipped double cream over the custard. Decorate with glace cherries, flaked almonds and sugar strands or sprinkle's.
  • Chill and serve — Refrigerate for at least 2 hours before serving so the layers set and the flavours settle.

Chef's Notes

  • Don't oversoak the sponge — a generous splash of sherry and juice is enough; drowning it makes the base soggy and collapsed rather than moist.
    Let the custard cool slightly before pouring so it doesn't melt the jam layer underneath.
    Trifle actually improves overnighting the fridge — make it a day ahead if you can, and add the cream and decorations just before serving.
    For a non-alcoholic version (the old "Bazaar Pudding" style), simply leave out the sherry and use extra fruit juice instead.
    Toast the flaked almonds in a dry pan for a minute or two for extra flavour and crunch.
