Here's a simple and delicious Pineapple Bake recipe — a warm, sweet, and slightly tangy side dish or dessert, perfect for potlucks, holidays, or a tropical twist on comfort food.

  • 1 Oven Baking dish +/- 22 x 27 cm to inches / 8.66 x 10.63 inches

Ingredients
  

  • ½ cup butter
  • 1 cup granulated sugar use less sugar if you do not want it too sweet or supplement with sweetener to taste
  • 4 large eggs room temperature
  • 570g crushed pineapple undrained
  • 5 slices white bread or 2 cups cubed white bread, crusts removed and cubed, (crusts removed is optional)
  • 1 tsp vanilla extract optional
  • pinch of salt
  • cinnamon or nutmeg for topping optional

Instructions
 

Preheat oven to 350°F (175°C). Lightly grease the baking dish

  • In a large bowl, mix together the crushed pineapple (with juice), sugar, melted butter, and eggs until well combined.
  • Fold in the bread cubes, making sure they soak in the mixture. Let sit for 5 minutes.
  • Stir in vanilla extract and a pinch of salt if using.
  • Pour mixture into the prepared baking dish and spread evenly.
  • Optional: sprinkle lightly with cinnamon or nutmeg for extra flavour.
  • Bake for 45–50 minutes or until golden brown and set in the center.
  • Let cool slightly before serving. Can be served warm or at room temperature.

📝 Serving Suggestions:

  • As a dessert with a scoop of vanilla ice cream.
  • Delicious with custard
