Here's a simple and delicious Pineapple Bake recipe — a warm, sweet, and slightly tangy side dish or dessert, perfect for potlucks, holidays, or a tropical twist on comfort food.

- ½ cup butter
- 1 cup granulated sugar use less sugar if you do not want it too sweet or supplement with sweetener to taste
- 4 large eggs room temperature
- 570g crushed pineapple undrained
- 5 slices white bread or 2 cups cubed white bread, crusts removed and cubed, (crusts removed is optional)
- 1 tsp vanilla extract optional
- pinch of salt
- cinnamon or nutmeg for topping optional
Preheat oven to 350°F (175°C). Lightly grease the baking dish
In a large bowl, mix together the crushed pineapple (with juice), sugar, melted butter, and eggs until well combined.
Fold in the bread cubes, making sure they soak in the mixture. Let sit for 5 minutes.
Stir in vanilla extract and a pinch of salt if using.
Pour mixture into the prepared baking dish and spread evenly.
Optional: sprinkle lightly with cinnamon or nutmeg for extra flavour.
Bake for 45–50 minutes or until golden brown and set in the center.
Let cool slightly before serving. Can be served warm or at room temperature.
