Mash the potatoes and then add the flours and salt and pepper. Mixing to create a dough.
Take chunks of the dough and roll them into long sausage shapes. I made about four long sausages from all of my dough.
Then chop the sausages up into pieces and flatten each piece slightly with a fork, creating little squares.
Lightly grease a baking tray and place your squares into the tray and pop in the oven.
Allow to bake for about 20 minutes or until the outside of your squares are crispy brown. Over baking at this point will cause the mash inside to harden leaving you with completely crunchy chips.
