For the Chicken Breasts 4 Chicken Breasts 1 cup Olive Oil 3 cloves Fresh Garlic finely chopped (3 tsp crushed garlic) 2 tsp Chicken Spice We love Cape Herb Spices 2 tsp Robertsons Garlic & Rosemary Spice Salt to taste Pepper to taste 4 tbsp Cottage Cheese For the Salsa Verde 2 large Tomatoes finely chopped 1 large Onion finely chopped 1 clove Garlic finely chopped (1 tsp crushed garlic) 1 large Fresh Jalapeño finely chopped 1 handful Fresh Coriander finely chopped ½ large Lemon juiced Salt to taste Pepper to taste
For the Chicken Breasts Marinate the chicken breasts in olive oil, garlic and spices for 20 minutes at least.
Cut a slice through the middle of the chicken breast and stuff each breast with 1 tablespoon of cottage cheese.
Place chicken breasts into the air fryer and cook for 15-20 minutes at 180°C.
For the Salsa Verde If you have a food processor, simply add all the ingredients into the food processor and turn it on until all is finely chopped.
If you do not have a food processor, no worries, you will simply need to finely chop all the ingredients and mix them together in a bowl.
