Few meals are as nostalgic and satisfying as a well-made meatloaf. This Classic Beef Meatloaf combines tender beef mince with a flavourful blend of herbs, fresh aromatics, and a sweet-spicy glaze that brings everything together. It’s the kind of recipe that reminds you of home, and the best part? It only takes 15 minutes to prepare before it heads into the oven.

With its juicy interior and caramelized glaze, this dish is both comforting and crowd-pleasing. If you prefer a lighter version, opt for lean beef mince to cut down on fat without sacrificing flavour.

Ingredients:

  • 500 g lean beef mince
  • 1 medium onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 free-range egg
  • 75 g fresh breadcrumbs
  • 75 ml milk
  • 1 tbsp Worcestershire sauce
  • 1 tbsp chopped fresh Italian parsley
  • 1 tbsp chopped fresh oregano
  • 1 tbsp fresh thyme leaves

For The Glaze:

  • 125 ml tomato ketchup
  • 1 tsp Tabasco sauce

Additional:

  • Extra virgin olive oil
  • Nonstick spray (e.g. Spray & Cook)

Instructions:

  • Preheat oven to 170°C (338°F).

  1. Mix all meatloaf ingredients in a large bowl until just combined.
  2. Lightly grease a baking tray with nonstick spray and olive oil.
  3. Shape the mixture into a loaf on the tray, or use a small bread oven dish.
  4. Bake for 45 minutes.
  5. Combine ketchup and Tabasco to make the glaze.
  6. Brush glaze over the meatloaf and bake for another 15 minutes

Ingredients
  

Meatloaf:

  • 1 medium onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 500g lean beef mince
  • 1 medium free-range egg
  • 75g fresh breadcrumbs
  • 75ml milk
  • 1 tbsp Worcestersire sauce
  • 1 tbsp freshly chopped italian parsley
  • 1 tbsp fresh oregano
  • 1 tbsp fresh thyme leaves

Glaze:

  • 125ml tomato ketchup
  • 1 tsp Tobasco sauce

Additional:

  • olive oil extra virgin
  • nonstick spray e.g. Spray & Cook

Instructions
 

Preheat the oven to 170°C (338°F)

  • In a large mixing bowl, combine the beef mince, onion, garlic, egg, breadcrumbs, milk, Worcestershire sauce, parsley, oregano, thyme, salt, and pepper.
  • Using clean hands, gently mix until everything is just combined—be careful not to overwork the mixture.
    Getting Ready to mix the meatloaf
  • Lightly grease a baking tray with nonstick spray and drizzle with a touch of olive oil.
  • Shape the mince mixture into a loaf on the prepared tray.
  • Bake in the preheated oven for 45 minutes.
  • While the meatloaf bakes, whisk together the tomato ketchup and Tabasco sauce to create the glaze.
  • After 45 minutes, remove the meatloaf from the oven and brush the glaze evenly over the top.
  • Return to the oven and bake for an additional 15 minutes or until cooked through.
  • Allow the meatloaf to rest for 5 minutes before slicing. Serve warm, and enjoy every bite.
