Creamy Cucumber Jelly Salad

We love fresh and healthy yet fun alternatives for Summer which is why we are so happy to have found this Cucumber Salad recipe to share.

Ingredients
  

  • 1 large cucumber grated
  • 500 ml cottage cheese (smooth or chunky)
  • 1 large onion grated
  • 250 ml mayonnaise
  • 1 packet green jelly (Greengage or if not available, lemon)
  • 250 ml boiling water
  • 1 tbsp fresh dill (when sliced it should amount to 1 tbsp.)

Instructions
 

  • Add the boiling water to the jelly and stir until dissolved. Let it cool before placing it in the fridge. Make sure not to let it set until you have added all the other ingredients. The jelly must just be very cold.

  • Add the cottage cheese, grated onion, dill and Mayonnaise to a mixing bowl, mix well then add the cucumber.Pour mixture in your favourite mould or salad bowl and refrigerate for several hoursv
