Ingredients

- 1 large Cucumber coarsely grated
- 1 tub Cottage cheese smooth or chunky
- 1 large Onion grated
- 250 ml Mayonnaise
- 1 Box Green jelly (Greengage or if not available, lemon)
- 250 ml Boiling water
- 1 tbsp Fresh dill finely sliced
Method
- To Make the Jelly: Add the boiling water to the jelly and stir until dissolved. Let it cool before placing it in the fridge. The jelly must just be very cold, but make sure not to let it set until you have added all the other ingredients.
- To Make the Salad Mix: In a mixing bowl add the cottage cheese, grated onion, dill and mayonnaise. Mix well before adding the cucumber.
- Pour the mixture into your favourite mould or salad bowl with the jelly mixture and refrigerate for several hours.
