- 1L water
- 500ml whole milk
- 2 tsp salt
- 250g polenta (coarse cornmeal)
- 80g unsalted butter
- 100g parmesan finely grated
- ½ tsp black pepper gound
Using half milk, half water gives a creamier result than water alone without being heavy. Keep the heat low once the polenta goes in — a lazy simmer prevents scorching and volcanic splattering. If it thickens too much before serving, loosen with a splash of warm milk or stock. Leftovers set firm in the fridge and can be sliced and pan-fried in butter until crisp.
