Silky, parmesan-loaded polenta made for soaking up rich braising sauces. Slow-stirred for the creamiest texture — the perfect bed for the lamb shanks.

Jump to Recipe Print Recipe

There’s a reason chefs reach for polenta when a dish needs something soft, silky, and quietly luxurious underneath it. This creamy parmesan version is slow-stirred to perfection — no shortcuts, no lumps, just butter and parmesan melted through until it’s glossy enough to catch every drop of sauce spooned on top. It’s the kind of side that turns a good braise into an unforgettable one.

  • 1L water
  • 500ml whole milk
  • 2 tsp salt
  • 250g polenta (coarse cornmeal)
  • 80g unsalted butter
  • 100g parmesan finely grated
  • ½ tsp black pepper gound

Method:

Creamy Parmesan Polenta — Quick Steps

  1. Boil water, milk, and salt together.
  2. Whisk in the polenta slowly to avoid lumps.
  3. Simmer on low, stirring often, for 35–40 minutes until thick and smooth.
  4. Stir in butter, parmesan, and pepper off the heat.
  5. Serve immediately, topped with the braised lamb.

Note

If you are pairing it with braised lamb shanks — spoon it into bowls and top with the shanks and sauce. Time it so the polenta finishes just as the braise is resting; it doesn’t hold well and gets stodgy if it sits too long.

Ingredients

  • 1L water
  • 500ml whole milk
  • 2 tsp salt
  • 250g polenta (coarse cornmeal)
  • 80g unsalted butter
  • 100g parmesan finely grated
  • ½ tsp black pepper gound

Using half milk, half water gives a creamier result than water alone without being heavy. Keep the heat low once the polenta goes in — a lazy simmer prevents scorching and volcanic splattering. If it thickens too much before serving, loosen with a splash of warm milk or stock. Leftovers set firm in the fridge and can be sliced and pan-fried in butter until crisp.

Instructions

  • Bring liquid to a boil: Combine the 1L water, 500 ml whole milk, and 2 teaspoons salt in a heavy-bottomed pot and bring to a gentle boil.

  • Whisk in the polenta: Reduce heat to low and pour in the 250 grams polenta (coarse cornmeal) in a slow, steady stream, whisking constantly to prevent lumps.
  • Simmer, stirring often: Switch to a wooden spoon and stir every few minutes, keeping the heat at the lowest simmer, until thick, smooth, and no longer gritty. Add a splash more warm water or milk if it gets too thick before then.
  • Finish with butter and parmesan: Off the heat, stir in the 80 grams unsalted butter, 100 grams parmesan, finely grated, and ½ teaspoons black pepper, ground until fully melted and glossy. Taste and adjust salt — parmesan varies in saltiness. Serve immediately, spooned into bowls with the braise on top.
