If you need a quick dish that the whole family will love? This Pineapple Bake takes just minutes to throw together and uses pantry staples you probably already have. It’s kid-friendly, freezer-friendly, and totally delicious warm or cold.

INGREDIENTS:

Pineapple and Bread Pudding
  • ½ cup butter
  • 1 cup granulated sugar use less sugar if you do not want it too sweet or supplement with sweetener to taste
  • 4 large eggs or 3 extra large eggs, room temperature
  • 570g crushed pineapple undrained
  • 5 slices white bread or 2 cups cubed white bread, crusts removed and cubed, (crusts removed is optional)
  • 1 tsp vanilla extract optional
  • pinch of salt
  • cinnamon or nutmeg for topping optional

Instructions – Pineapple Bread Pudding

  1. Preheat oven to 350°F (175°C). Grease baking dish.
  2. Mix pineapple (with juice), sugar, melted butter, and eggs in a bowl.
  3. Fold in bread cubes, let soak 5 minutes.
  4. Add vanilla and pinch of salt.
  5. Pour into dish, spread evenly. Optional: sprinkle with cinnamon/nutmeg.
  6. Bake 45–50 minutes until golden and set.
  7. Cool slightly, serve warm or at room temperature.

  • 1 Oven Baking dish +/- 22 x 27 cm to inches / 8.66 x 10.63 inches

  • Pour mixture into the prepared baking dish and spread evenly.
  • Optional: sprinkle lightly with cinnamon or nutmeg for extra flavour.
  • Bake for 45–50 minutes or until golden brown and set in the center.
  • Let cool slightly before serving. Can be served warm or at room temperature.
