Here, rich 70% dark chocolate is swirled through in loose, dramatic ribbons, adding a bittersweet edge to all that sweetness. Sandwich two together with billowy whipped cream and you’ve got an effortlessly elegant bite that looks far harder than it actually is.
Meringues have a reputation for being finicky, but this recipe strips it back to the essentials: egg whites, sugar, a touch of acid, and melted dark chocolate marbled through for good measure. Low and slow in the oven does all the work, leaving you with crisp, chewy-centred bites that keep for weeks — ideal for baking ahead of a gathering, or just because.
Crisp on the outside, marshmallowy within, and ribboned with dark chocolate — these swirl meringues are proof that simple ingredients, treated well, go a long way. Whip, swirl, bake, sandwich with cream. That’s it.
Ingredients:

- 3 large egg whites
- ½ tsp spirit vinegar or lemon juice
- Pinch salt
- 180g Selati castor snow
- 100g 70% dark chocolate, melted
Instructions:
- Whisk whites, vinegar & salt to stiff peaks.
- Add sugar gradually; whisk to stiff, glossy meringue.
- Swirl in melted chocolate — don’t overmix.
- Spoon onto trays; bake 120°C, 1¼–1½ hrs.
- Cool fully. Sandwich with whipped cream to serve.
Notes:
- I’ve used the longer bake (1½ hrs, fan oven) as the upper bound for total time — if using conventional/gas at 1¼ hrs, total time drops slightly.
- Cooling isn’t strictly “active” time, but meringues need to cool fully before sandwiching with cream, so worth flagging separately if you want a “ready to serve” time too. Let me know if you’d like me to add that as a fourth line.

Chocolate Marbled Meringue Kisses: A Simple Gluten-Free Treat
Ingredients
- 3 large egg whites

- 280g caster sugar snow (Selati)
- 100g 70% dark chocolate melted
Instructions
Prep: Preheat oven to 120°C (fan). Line two baking trays with foil or baking paper.
- Whisk the whites. In a spotlessly clean, dry bowl (glass or metal — never plastic), whisk the egg whites with the vinegar and salt on medium speed until they hold stiff, glossy peaks.
- Build the meringue. Add the sugar gradually, 2 tbsp at a time, whisking to stiff peaks between each addition. The finished meringue should be thick, glossy, and hold its shape like a snowdrift.
- Marble the chocolate. Drizzle the melted chocolate over the meringue. Fold through just once or twice with a spatula for bold, visible swirls — resist the urge to overmix.
- Shape and bake. Spoon heaped dessertspoonfuls onto the trays, shaping into ovals with a second spoon, or leave rustic and round. Bake 1½ hours (fan) or 1¼ hours (conventional/gas), until crisp underneath and pale coffee in colour.
- Cool and store. Cool completely on the tray or a wire rack. Store in an airtight tin up to 2 weeks, or freeze up to 1 month.
- Serve. Sandwich pairs of meringues with a generous dollop of softly whipped double cream.
