What is Mielie Pap?

The base of this recipe is a type of maize flour porridge that is made across Africa. Called mielie pap in South Africa, it has an array of names across the rest of Africa as well as a variety of ways in which to cook it. You can make a soft creamy porridge with it, a stiff pap or even a flaky textured grain like meal. You can eat it in many different ways with many things. As well as being tasty and affordable, it is an incredibly versatile food.

Easy but still Rewarding

This recipe takes just over an hour of which only 10min is actual hands on time. But will nonetheless leave you with a warm, flavourful meal that could be just what was needed to satisfy your body and mind. It’s comfort food that doesn’t need to be coated in chocolate. (Although I have absolutely nothing against anything coated in chocolate!).

You can adjusted according to what is available, so if you are desperate for a Mielie Pap Tart also known as paptert and don’t have any thyme, try something else like rosemary or oregano. Swop the mushrooms for sun dried tomatoes or add garlic or chilli. The options are almost endless. If you’re wondering what goes well with a braai, then take a look at our Cherry Bacon Sosatie Sticks recipe!
