A sweet, moist, and delectable pudding that is loved by many, this Malva Pudding is a classic that all your family and friends will love. Serve it with some custard or fresh ice cream for an extra treat on the side.

A South African Classic 

Malva pudding is a sweet pudding that originates from South Africa. It consists of a caramelised sponge that is made with apricot jam, and is soaked in a sauce made from cream, or for this recipe evaporated milk, butter, sugar, water, and vanilla essence. Malva Pudding is a staple in many restaurants, even around the world, and is sold in most supermarkets (even Oprah’s chef has it down), but we would argue that the best versions are always the homemade ones.  

Simple yet Indulgent 

Both the pudding and the sauce are quite simple to make and use basic ingredients that are easy to find and budget-friendly. Once the sponge is baked and straight out of the oven, the sauce is poured over it, seeping into the sponge beautifully, leaving you with a moist and tender sponge. This dessert is best served warm, so it is perfect for those cold winter nights.

Ingredients
  

For the Pudding:

  • 125 ml White sugar
  • 30 ml Apricot Jam
  • 5 ml Bi-carbonate of Soda
  • 250 ml Cake Flour
  • 2 ml Salt
  • 15 ml Butter
  • 1 large Egg
  • 250 ml Milk
  • 5 ml Vanilla essence

For the Sauce:

  • 410 g Evaporated Milk (1 tin)
  • 250 ml Milk
  • 125 ml Water
  • 125 g Butter
  • 5 ml Vanilla Essence
  • 125 ml Sugar

Instructions
 

For the Pudding:

  • Preheat Oven to 180 degrees Celsius.
  • Whisk sugar and butter until creamy, add the jam and egg and mix well!
  • Mix Bi-carb and milk, add to sugar mixture add flour, vanilla essence and salt to mixture and mix well.
  • Pour mix into baking tray and bake for 30 minutes.

For the Sauce:

  • Heat milk, sugar and butter in a sauce pan and boil for 5 minutes, mixing well.
  • Remove mixture from heat and mix it with vanilla essence.
  • Pour hot sauce mixture over the pudding as soon as it comes out the oven.
  • Serve with warm custard and ice-cream.
