A baked berry cheesecake is the kind of dessert that makes a weekend gathering feel special, with a crisp biscuit base, creamy filling and jewel-toned fruit topping.
Strawberries, blueberries and mulberries are gently simmered with honey to make a naturally sweet-tart compote. A little of the berry mixture is folded into the filling, while the rest is spooned over the cooled cake.
The lime zest brightens the rich cream cheese filling, and the make-ahead format makes this cheesecake ideal for celebrations, family lunches or a centrepiece dessert.
