For the Dough

  • ½ cup apricot jam
  • ½ cup butter, softened
  • ½ cup milk
  • 2 tsp baking soda
  • 1½ cups flour
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • ½ tsp salt

For the Syrup

  • 4 cups water
  • 1 cup sugar
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger

Method

  1. Boil the jam and butter, mix in the milk and baking soda.
  2. Stir in the flour, cinnamon, ginger and salt to form a soft dough.
  3. Boil the syrup, then drop in spoonful’s of dough.
  4. Cover and simmer on low until cooked and syrupy. Serve warm.

Ingredients
  

For the Dough

  • ½ cup apricot jam
  • ½ cup butter softened
  • ½ cup milk
  • 2 tsp baking soda
  • 1½ cups flour
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • ½ tsp salt

For the syrup

  • 4 cups water
  • 1 cup sugar 1
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger

Instructions
 

Make the Dough

  • Boil the apricot jam and butter together in a saucepan until melted and combined.

  • Dissolve the baking soda in the milk, then stir it into the jam and butter mixture. Remove from the heat.
  • Gradually stir in the flour, cinnamon, ginger and salt until a soft dough forms.

Make the Syrup & Cook

  • In a separate saucepan, combine the water, sugar, cinnamon and ginger. Heat until it starts to boil.
  • Drop spoonful's of the dough into the boiling syrup. Cover with a lid and let it cook slowly over low heat until the dough is cooked through and the syrup has thickened.
  • Serve warm, generously spooned with syrup, alongside a scoop of ice cream or a pour of custard.
